So I finally perfected my American style pancakes at the weekend! I can tell you, whoever you cook these for is going to be one happy camper. Spread the love, try the recipe!
Makes approx 12
200g self-raising flour
100g caster sugar
1 heaped tsp baking powder
1 egg
200ml milk
approx 25g butter
In a large mixing bowl, mix together the flour, sugar and baking powder. In a seperate bowl or jug, beat the egg and milk together.
Make a well in the centre of the dry ingredients, pour in the egg and milk mixture, and gently combine with a wooden spoon.
Heat a small knob of butter in a large non-stick frying pan. When it is melted and bubbling, add three small ladlefuls of the pancake batter.
Cook for about a minute, until the top is slightly bubbling and the underneath is a golden brown. Flip using a spatula and cook the other side of the pancakes for a minute more. If the pancakes are not browning, increase the heat a little.
Remove from the pan and keep warm in a very low oven. Repeat this until all of your mixture has been used.
I like to pile mine onto a plate and pour over maple syrup, for an impressive finish. Serve with crispy streaky bacon and extra maple syrup!
